What are your pizzas like?

  • Our pizzas are served in a single size - roughly 11” to 12” - and serve 1 to 3 people, depending on appetite.

  • Our dough is made fresh daily in small batches. We cold-leaven our dough between 24 to 48 hours for maximum flavor and texture, and bake exclusively in our brick woodfired oven.

  • We like our hand-stretched pies thin and airy (with a perfect bit of smoky char-spotting on the crust), cooked medium-well done, and always with a soft, chewy interior.

  • We use a combination of fresh mozzarella and grated hard cheeses (aged Parmigiano Reggiano & Pecorino Romano) for finishing on most of our pizzas, but will branch out on occasion for specialty pies.

  • We are obsessive about ingredients and are fortunate to be surrounded by many amazing farms and growers in Columbia County, and we make every effort to support them. We want to use as many fresh herbs, vegetables, meats, and mushrooms in our area as we can, and we’re always interested in new partnerships! Feel free to get in touch!


Why woodfired?

Because SCIENCE ! Our huge brick oven is heated entirely with clean, natural hardwoods (primarily white oak) and uses both conductive and radiant heat to create a perfect pizza. The smokiness from the wood adds amazing flavor and character to each individual pie, and is something you won’t find locally anywhere else.


Do you sell gift certificates?

Sure do! We have gift certificates available at the cart.  If you would prefer a digital version, they are available here.


Do you have vegan pizza?

Historical fun fact time: the very first pizzas actually were vegan, composed of leavened flatbread simply topped with tomatoes! We currently offer a dressed-up version of this ancient classic (the ‘Marinara) with sliced garlic and herbs. We may further experiment with vegan cheeses and toppings down the road, if demand dictates. Let us know if you have any vegan ideas to share!


What about gluten free items?

Unfortunately, we do not offer any gluten free pizzas at this time. Our mobile kitchen is a little too small to completely avoid cross-contamination with gluten-heavy flours, and we don’t want to put anyone at risk for allergic reactions. We also just really, really love gluten.


How do I reheat pizza?

No one wants to wait more than a minute to reheat a slice of pizza, but I’m afraid you are going to have to. It might seem like an eternity, but please follow these steps: preheat oven to 350 degrees, place your slices(s) on a piece of aluminum foil, and place directly on the rack in the middle of the oven for 8-10 minutes, or until cheese has sufficiently melted. Whatever you do, just don’t punish yourself by microwaving it and turning the crust into hard rubber. You are worth the wait.


Do you do catering events?

We’re staying close to home for phase one of Hallows, but would like to branch out to be able to participate in more mobile events in the future.


Uh, is my pizza burned?

Char, often confused with “burnt spots”, is that deep brown/black bubbling on your crust from the radiant heat of a high temperature oven, and is one of the main characteristics of proper woodfired pizza. This dark blistering can be found along the rim of the crust, or leoparded on the bottom of your pizza. Charring not only adds a delicious smoky aroma & flavor to pizza, but also adds distinct character to each pie! No pizza chars the same, and that’s how we like it!

That said, we do love pizzas cooked on the medium-well-done side. But if your pie comes out looking like a pile of charcoal briquettes, we’ll be happy to make you a new one.  


How many toppings can I have?

What’s that old saying? “Less is more”. 

We want our pizza to be delicious from the ground up - meaning perfect ratios of flavor, texture, and char.

We encourage this balance in our menu by not obscuring the key elements of crust, sauce and cheese with more than three toppings per pizza.

Not only will this ensure even and thorough baking, but it also won’t feel like you’re trying to eat an entire lasagna with one hand.


What does Hallows mean anyway?

“Hallows: to honor as holy, or consider sacred”.

We are happy residents of the wonderful city of St. Helens, and we wanted a name that honored our town as much as it honored our pizza. ‘Hallows’ is a nod to ‘Halloweentown’, a cult Disney film from 1998 that was filmed almost entirely in St. Helens, and is still celebrated to this very day.
